Cauliflower Protein-Packed Breakfast Bowl

You are going to love this simple, delicious and protein-packed breakfast bowl. It is chock full of cauliflower,
scrambled eggs, arugula and creamy avocado. YUM! Make a large batch to to enjoy all week long!

For the Cauliflower

  • 4 teaspoon olive, avocado, or coconut oil
  • 1 cup red onion diced
  • 4 clove garlic chopped
  • 1 teaspoon turmeric
  • 1 teaspoon paprika or smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne (optional)
  • 1 tsp red pepper flakes (optional)
  • 8 cup cauliflower florets chopped
  • salt to taste
  • black pepper to taste

For the Bowl

  • 4 cup arugula (can use spinach, kale or your favorite greens)
  • olive oil
  • lemon juice about 1/4 of a lemon
  • salt to taste
  • black pepper to taste
  • 2 avocados sliced

For the Egg Scramble

  • 1 tbsp olive oil or other favorite oil
  • 8 eggs (pasture-raised is best)
  • salt to taste
  • black pepper to taste




  1. For the cauliflower, heat a medium or large sized skillet over medium heat. Add enough oil to lightly coat the bottom of the pan, and when hot, add the onion, garlic, and spices, except salt and pepper. Cook for 2-3 minutes (until fragrant) before adding the cauliflower. Cook the cauliflower until tender (7-10 minutes). Stir frequently.

  2. Meanwhile, prepare the bowl(s) by adding the arugula or other green and lightly dressing with olive oil, lemon juice, salt and pepper, to taste. When cauliflower is done, put it on top of the arugula.

  3. Next, scramble the eggs in a bowl. Turn the pan to medium heat, add the oil to the pan, Once oil is heated, add the eggs. Season with a pinch of salt and pepper. Stir and cook until eggs are fully cooked. Add to bowl.

  4. Top with sliced avocado and enjoy!
