The Easiest Curry You'll Ever Make + Blue Banana Nice Cream Dessert

Veggie Chickpea Curry

Your dinner plans just got a lot easier! This 20 minute recipe is loaded with nutrition, veggies and does not hold back on flavor! Plus, it is super budget friendly.

INGREDIENTS

FOR THE CURRY

  • 3 cups of broccoli and cauliflower, chopped (I have used frozen veggies and it still comes out great)
  • 1 cup frozen peas
  • 2 carrots
  • 2 cloves garlic, minced
  • 1 tsp turmeric
  • 1 can chickpeas
  • 2 Tbsp red curry paste
  • 1 can coconut milk

INSTRUCTIONS

  1. Heat a medium saucepan over medium heat. Add the garlic, coconut milk, turmeric, and curry paste. Stir to combine. Bring the mixture to a boil then simmer for 5 minutes. Add all the veggies and chickpeas. Cover and cook for 8-10 minutes until the veggies are tender but not soggy!

  2. Add salt, pepper and a squeeze of lime juice to taste. Serve over brown rice, quinoa or eat plain.

INGREDIENTS

FOR THE NICE CREAM

  • 2 frozen bananas
  • 1/4 cup frozen blueberries
  • 1 tbsp almond butter
  • 1/4 cup almond milk (add more gradually if it's too thick)
  • Pinch of cinnamon

INSTRUCTIONS

  1. Add all ingredients to a blender or food processor. Blend until smooth and creamy.
  2. Drizzle almond butter and add extra blueberries and banana slices for a fruity topping! Eat right away to enjoy this creamy, healthy take on ice cream!
