Veggie Chickpea Curry

INGREDIENTS
FOR THE CURRY
- 3 cups of broccoli and cauliflower, chopped (I have used frozen veggies and it still comes out great)
- 1 cup frozen peas
- 2 carrots
- 2 cloves garlic, minced
- 1 tsp turmeric
- 1 can chickpeas
- 2 Tbsp red curry paste
- 1 can coconut milk
INSTRUCTIONS
Heat a medium saucepan over medium heat. Add the garlic, coconut milk, turmeric, and curry paste. Stir to combine. Bring the mixture to a boil then simmer for 5 minutes. Add all the veggies and chickpeas. Cover and cook for 8-10 minutes until the veggies are tender but not soggy!
Add salt, pepper and a squeeze of lime juice to taste. Serve over brown rice, quinoa or eat plain.
INGREDIENTS
FOR THE NICE CREAM
- 2 frozen bananas
- 1/4 cup frozen blueberries
- 1 tbsp almond butter
- 1/4 cup almond milk (add more gradually if it's too thick)
- Pinch of cinnamon
INSTRUCTIONS
- Add all ingredients to a blender or food processor. Blend until smooth and creamy.
- Drizzle almond butter and add extra blueberries and banana slices for a fruity topping! Eat right away to enjoy this creamy, healthy take on ice cream!
